A dreary cold November Sunday calls for some baking! And this morning these bananas on my counter were just calling to be baked into some delicious honey banana muffins. Do you have some bananas that need baking? Here is the recipe we used from Taste of Home.
What I love about this recipe is that it contains absolutely no sugar (just honey!) and it uses whole wheat flour. It's not totally healthy though...our son asked for chocolate-chip banana muffins, so I substituted the raisins for chocolate chips.
Makes 10-12 muffins
Honey Banana Muffin Recipe, with Whole Wheat Flour
Ingredients
1 cup whole wheat flour
1/2 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground nutmeg
1/4 teaspoon salt
2 eggs, lightly beaten
2 ripe bananas
1/2 cup unsweetened applesauce
6 tablespoons honey
1/2 cup chocolate chips (or golden raisins)
Instructions
In a medium bowl, stir together the flour, baking soda, nutmeg, and salt.
In a large bowl, mash the bananas and add the eggs, applesauce and honey and stir until combined.
Stir in the dry ingredients until moistened and well combined. Fold in the chocolate chips.
In your muffin pan, use paper muffin cups and fill two-thirds full with batter.
Bake at 375° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely.
