Ingredients


  • 1 pound of carrots, peeled and sliced lengthwise

  • 2 tablespoons of olive oil

  • 2 tablespoons of honey

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of black pepper

  • 1 tablespoon of fresh thyme leaves

Preparation

Step 1


Preheat the oven to 400°F. In a mixing bowl, whisk together olive oil, wildflower honey, salt, black pepper, and fresh thyme leaves. Add the sliced carrots to the mixing bowl and toss to coat the carrots evenly with the honey mixture. Spread the coated carrots out in a single layer on a baking sheet lined with parchment paper.


Step 2


Roast the carrots in the preheated oven for 20-25 minutes, or until the edges start to turn golden brown and the carrots are tender. Once done, remove the baking sheet from the oven and let the carrots cool for a few minutes before serving. Garnish with additional fresh thyme leaves and enjoy!


Note: You can also add other vegetables like parsnips or sweet potatoes for added variety. Additionally, you can adjust the amount of honey to taste.
